Kara's Bajio Chicken

I have a little craft project in the works, but I decided to share another recipe with you since the other project probably won't be done today. Over at Kara's Kitchen Creations, she had a recipe for this chicken that sounded delicious, and looked really easy to make. It's been on my list of recipes to try ever since she posted it. I finally made it over Father's Day weekend. Let me just tell you I was so glad I made it. It was indeed very easy, and the taste was great! I told my husband that it was kind of funny it was Father's Day and I was making some dish I didn't even know if he'd like. Well, he ended up loving it, too, so it was perfect. We did end up leaving out the chilies because I didn't have any, so I used a hotter salsa than I usually do. My favorite topping on these is onions, and that didn't get added to the recipe card, oops! So if you like onions, chop some up and sprinkle on top.

Sprite. Brown sugar. Salsa. Um - that does NOT sound good at all. So is it sweet and salty....not sure if I can try this....I'll run it by the chef and see what he thinks....

I am with Michelle, sprite, brown sugar and salsa all mixed together? But if your husband liked it, it has to be good right? :)

Definitely sounds interesting, but I'll take your word for it that it's good! The pasta sauce sounds delicious!

Like a bbq salsa I'm guessing. Actually, my family will eat anything in a tortilla with shredded cheese!

Hey, I wanted to say I like your new blog design!

PS I've discovered that when I make a new recipe I get a lot better results if I serve it about 45 minutes late. That way they are starving and a lot less likely to balk!!

Another great recipe card. You do such good digital work! Sprite??? I've never considered soda as an ingredient. Hmm...

I'm so glad you liked my chicken. I got a laugh out of all the previous comments about the sprite. I actually thought that the first time I tried it in another meat recipe. I found out it's added more as a tenderizer than for the actual flavor.
